Easy cheesy corn fritters with cilantro lime dipping sauce

I love a good cheesy corn recipe, and this is cheesy AND easy! The best part about this recipe is that it is easy and easily substituted. Most of the measurements should be done by the heart, save for the core parts of the recipe itself. I don't believe in bland food, so I was a little heavy handed on each spice! I added the spices I personally used but you can use any that your heart desires. 


For the fritters

1 cup all purpose flour

2 cups corn kernels

1 teaspoon baking powder

Whatever seasonings float your boat (paprika, garlic powder, onion powder, basil, Chili powder, salt, pepper)

2 eggs

2.5 cups cheese

Handful of green onions

1.5 cups milk (you CAN use water but it wont taste as good- from experience) 

 For the sauce

1 cup mayo (sour cream is a great alternative)

Lime juice

Cilantro

1 Mild Taco Bell packet

Don't raise your eyebrows at me. I wanted a lil kick and that's what I had and it worked so good. You're just salty you didn't think of it first. 

Pour just enough oil to cover your pan then tern your stove on to let the pan get hot.be careful to not start a grease fire by keeping it not TOO hot while you work.

Mix all of the fritter ingredients together until all of the corn and cheese is coated in the batter.

Plop a dollop of the fritter batter in to the oil and let it cook. After a few minutes, flip when it becomes golden. You should be able to see it on the sides by the bottom. With a large pan, I was able to make about three at a time.

Anytime you add more to the pan, make sure you've got a little oil on the bottom of the pan.

Mix all of the ingredients together for the sauce and that is seriously it. 

Alternatively

You can also cook the fritters in the air fryer by plopping the batter onto a piece of parchment paper and cooking them for 350 F (180 C) until golden. I would still flip in the air fryer to make sure all sides get perfect.
